Thursday's Southern Recipes


In honor of my Justice Seekers series, to which I've included some of my family's favorite recipes in the back of the upcoming release To Write a Wrong: A Justice Seekers Novel, releasing in September. But I'll be sharing some with those who are signed up for my newsletter, and I'll be sharing some here every Thursday during the month of March.

Here is my husband's recipe:

Casey’s Chicken & Dumplings

1 cup chopped celery
1 cup chopped onion
whole chicken with skin, quartered
½ stick real butter
2 cloves garlic, crushed
2 tablespoons Worchestershire sauce
¼ teaspoon Tabasco
2 cans of ready-to-bake biscuits

Sauté onions, garlic, and celery in the butter until onions are translucent. Add quartered chicken and sear. Add approximately 5 cups of water and bring to a boil. Keep at boiling for 45 minutes to 1 hour. Remove chicken and debone, then remove the skin. Return chicken to water/celery/onion mix. Add Worchestershire sauce and Tabasco. Simmer 35 minutes. Slowly and gradually drop in biscuits—each quartered. Simmer 20 minutes.

Today's Recommendation is: The Truth About Guys by Chad Eastham

Okay, it's a fact. God made guys and girls different in more ways than just the physical.

Mama’s Hot Water Corn Bread

white cornmeal mix—2 cups
1 finely chopped onion
finely chopped jalapeño slices—to taste
boiling water
hot oil

Put about 3/4 inch of oil in the skillet and heat till hot. Mix cornmeal, onion, & jalapeños. Add boiling water until mixture sticks together, about like mashed potatoes. Drop by the tablespoon into the grease, then mash with a spoon to flatten a bit. When brown, turn once.

Becca’s Oooey-Gooey Butter Cake


1 box yellow cake mix
1 egg, slightly beaten
1 stick of butter, melted

Mix all together and press into 9 x 13-inch ungreased pan.

Glaze

1 package 8 ounce cream cheese
1 box powdered sugar
2 eggs

Cream together and pour over dough. Bake 30 to 40 minutes until lightly brown at 350 degrees

Thursday's Southern Recipes

In honor of my Justice Seekers series, to which I've included some of my family's favorite recipes in the back of the upcoming release To Write a Wrong: A Justice Seekers Novel, releasing in September. But I'll be sharing some with those who are signed up for my newsletter, and I'll be sharing some here every Thursday during the month of March.

BB’s Roux-less Crawfish Étouffée
1 med onion (chopped)
1 green pepper (chopped)
2 sticks real butter
2 family-size cans cream of mushroom soup (undiluted)
3 large cans diced tomatoes
2 cans rotel tomatoes
2 lbs crawfish tail meat (fresh or frozen)
Worstershire & Tony Cachere’s – to taste

In large soup pot, melt butter over low heat – increase heat to medium and sauté onions and peppers until soft. Add worstershire and Tony’s to taste. Stir in soup, tomatoes, and rotel – mix well. Allow to simmer 15-20 minutes, stirring frequently to avoid sticking. Add crawfish tails and mix well. Lower heat slightly and simmer another 15-20 minutes, stirring frequently. Serve alone or over white rice, and garnish with grated cheese if desired. (Note: add hot water to soup/tomato mixture to thin to desired consistency).

Southern Recipes

So, in honor of my Justice Seekers series, to which I've included some of my family's favorite recipes in the back of the upcoming release To Write a Wrong: A Justice Seekers Novel, releasing in September. But I'll be sharing some with those who are signed up for my newsletter, and I'll be sharing some here as well.

Uncle Dan's Pancakes

1 c flour
1 c milk
1/4 c oil
1 tbs baking powder
1/2 tsp salt
1 egg

Mix well, cook in hot greased skillet until bubbles form and stay open. Only turn
once. Serve with liberal amounts of butter and Steen's Ribbon Cane Syrup.
